Have been ages since I update this blog. This will be by "opening blog" for 2009 sharing my excitement of my new finding!!!
Yes, after searching for close to half a year in the net on apom manis recipe, I finally found the recipe!!!!
I have been craving for Apom Manis since I am in my 2nd trimester of pregnancy, perhaps because this is one of my regular breakfast during weekend back in Penang. So the most I can do when I am craving for apom manis is to google out the picture of my favourite penang apom and look at it, imagine how nice it tastes. But it is very torturing not being able to put the food in my mouth! Back in Penang it is so easy for me to get Apom Manis anywhere especially in the morning. But now I am so happy I am able to make it anytime at home when I want to eat. I can't believe it is that easy to make. It is just that I don't have the small pan like the one the hawkers are using in Penang. So my apom manis is supersize apom but who cares, as long as I can get to eat it, and the taste is so close to the one back home.
Here's the recipe if any of you guys interested to try out:
Ingredients – Makes 9 pieces
5 oz (150 g) rice flour
2/3 cup (180 ml) coconut milk
1/2 tsp dried yeast
1/2 tsp salt
4 Tbsp (60 g) granulated sugar
4 large eggs
1/3 cup (100 ml) water

A month ago, I asked Shirley for the recipe of the strawberry mousse cheesecake. However, for the past few weeks, I can't even find time to try out this recipe until last Saturday when I was thinking of what to bring to life group. It is a very simple recipe and the instruction given is pretty easy as well. I went to shop for the ingredients and started to do it on Saturday. Rachel taught me to make my own strawberry puree - it is just the bend of pure strawberry, it is that easy! The whole process of making the cheesecake didn't take me more than 2 hours though!
After chilled overnight, I brought the cheesecake to the life group. Rachel helped me to take out the cake from the baking pan. It looked pretty alright. Too bad there are two pregnant ladies in the group that are unable to eat cheesecake. However, I have the rest of the group to be my Gennie pig! The result? Of course they like it!!! (if not I won't have blog it, he he). I am glad that it turns out well, even though it was not as nice as the one in Shirley's blog. Hope next time I can do a better cheesecake! Anyway, I really need to thank Shirley for her recipe! Thank you sis!!

2 week ago, Uncle Bernard and his family came to Melbourne for their PR first entry. We had the honour to host them for 17 days while they were here. We had a great time and fellowship together and of course GOOD FOOD everyday!
As I promised to make some birthday cupcakes for my boss’s daughter, I took this opportunity to ask the Ooi’s girls – Rachel & Carin whether they want to join me for this cupcakes session. They jumped with joys. They told me finally they are able to make their own cupcakes!
I divided this cupcake session into 3 days so that we won't be too exhausted. First day, we spent a few hours doing our fondant decoration for the cupcakes. The girls were so excited playing with the sugar-paste and doing flowers with the fondant. Second day is the baking session. I gave them the ingredient and taught them how to mix it up with the mixtures. We did two flavours of cupcakes – Vanilla and Chocolate. It turns up pretty well, although there are some odd looking and overflowing cupcakes. We rested for one day and continued our final session – decorating the cupcakes!!! I made some chocolate ganache and butter cream for the toppings then there starts our decorating session! I started by teaching them some basic pipping skills and leave the rest of decoration to them. The girls are so creative, came out with a lot of very nice decoration with stories on each cupcake, it was so fun looking at them enjoying themselves and they even had stories for each cupcakes design they made! Overall, we had a great cupcakes session. Enjoy the laugher and fun we had together even though it was quite tiring.
After they left, we feel so quiet in the house. Started to miss their presence and accompany, started to miss them. Hope that soon they will be able to move here for good, but of course according to God’s will. Anyway, we will be able to see Rachel in a month’s time as she will be coming here for good for her university. More chance to cook for her and bake with her then!

Last week, I have an opportunity to try on my “new hobby” for Sue Anne’s birthday. I wasted close to one dozen of eggs, more than 2 kg of icing sugar (yes, high in sugar) and 1kg of flour just to get an “acceptable” cup cake done! The next challenge is icing decoration. Firstly, it is so hard to find a good recipe for the cream (perhaps maybe my requirement is too high). Secondly, I lack of skill in using the piping bag for the decoration. At the end, my icing is either not smooths or design looks lousy. However, I manage to come out a cup-cakes birthday cake for Sue Anne with 2 favours of cakes – chocolate mud cake and vanilla butter cake. The last challenge is to find the box to put the cakes in! I went to the cake accessories shop, but they do not sell the paper box. I found one plastic cake container in Reject Shop but my cake base did not fix into the container. At the end, I decided to go to one of the cake shop that we used to get our birthday and ask the owner to sell us the cake box. She is very kind to sell it to me even though she told me that she is not suppose to do so.
I am still “hunting” for decorating books and good icing piping tools. Hopefully I will be able to get some with a reasonable price and most important I will be able to make a nice and good cup-cake.
